Boursin, Bacon, and Spinach Scrambled Eggs in a Jar

A quick and easy scrambled eggs breakfast, topped with savory bacon, creamy Boursin cheese, and spinach, tastes even better in a mason jar.

Yields: 1 serving
1/2 c. baby spinach
chives, finely chopped
Kosher salt and pepper
- Boursin, Bacon and Spinach: Place the bacon between two pieces of paper towel on a plate. Microwave until crispy, 2 to 3 minutes. Let cool, then break into small pieces.
- Meanwhile, place the spinach and half each of the Boursin and chives in a 10- to 12-ounce jar (at this point you can cover and refrigerate overnight).
- In the morning, add the eggs, milk and a pinch each salt and pepper. Screw the top on tightly and shake vigorously until well mixed, about 20 seconds.
- Remove the top and microwave for 60 seconds, then in 15-second intervals until just set. Top with the bacon and the remaining cheese and chives.
